In honor of Memorial Day, here are a few last minute recipes for your parties...
6 chicken drumsticks, skin removed
For the sauce: 2 Tbls Canola Oil 1 jalapeno, seeded and diced 4 cloves garlic, diced 1 small onion, diced 3 cups ketchup 1/4 cup chicken stock 3/4 cup orange juice 1/4 cup molasses 1/4 cup Coca-Cola 1/4 cup brown sugar 1 Tbls liquid smoke 1 tsp garlic salt 1 tsp paprika 1/2 tsp black pepper
To prepare the sauce heat canola oil in a large pot over medium high heat. Saute the onion, jalapeno, and garlic until soft, about 5 minutes. Add in ketchup, orange juice, Coca-Cola, and molasses. Mix well. Add brown sugar, liquid smoke, garlic salt, paprika and black pepper. Stir until well combined. Reduce heat to low, and cook until sauce starts to thicken, about 15 minutes. If you want a smooth sauce, you can use an immersion blender to puree it.
Preheat grill to medium high heat. Grill drumsticks until fully cooked, about 10 minutes turning frequently. Serve chicken with sauce poured over the top.
You will have lots of extra sauce. Store in fridge for a week, or you can freeze it.
For Burgers: 1lb ground turkey 1/3 cup green onions, chopped 2 Tbls cilantro, chopped 1 large clove garlic, grated 1/2 tsp salt 1/4 tsp red pepper flakes 1/2 lime, juiced
For Guacamole: 1 large avocado, pitted 2 Tbls tomatoes, chopped 2 Tbls onion, chopped 1/2 tsp chili powder 1/2 tsp paprika 1/8 tsp salt 1/8 tsp black pepper
In a bowl combine chicken, green onions, cilantro, garlic, salt, pepper flakes, and lime juice. Mix until well combined. Do not over mix. Form into 4 patties, with a slight well in the center.
Prepare guacamole. Mash avocado with a fork. Mix in tomato, onion, paprika, chili powder, salt, pepper.
Stir until well combined.
Heat grill to medium high heat (a grill pan or skillet would work as well). Grill for about 5 minutes per side. You want them cooked all the way through. Toast buns on the grill for the last minute.
Place burgers on the buns, and top with guacamole to serve.
